Ground Lamb Burgers

Juicy homemade ground lamb burgers made with fresh herbs, onion, garlic, Dijon mustard, and simple spices, cooked until safely done and rested for maximum juiciness.

Ingredients
  

  • 1 lb ground lamb
  • Red onion
  • Garlic
  • 4 tbsp chopped mint
  • A handful parsley or cilantro
  • A pinch ground coriander or cinnamon
  • 1 tsp Dijon mustard
  • to taste Salt
  • to taste Black pepper
  • 1-2 tbsp vegetable oil

  • Measuring spoons

  • Cast-iron skillet
  • Instant-read thermometer

Method
 

  1. Place the ground lamb in a medium mixing bowl with finely chopped red onion and grated garlic.
  2. Add the chopped mint, parsley or cilantro, ground coriander or cinnamon, Dijon mustard, salt, and black pepper.
  3. Gently fold the mixture until just combined without overworking the meat.
  4. Divide the mixture into four equal portions and shape them into patties about 3/4–1 inch thick.
  5. Press a shallow indent into the center of each patty.
  6. Chill the patties in the refrigerator until firm.
  7. Heat a cast-iron skillet over medium-high heat with vegetable oil.
  8. Cook the burgers for 3–5 minutes per side.
  9. Check the center with an instant-read thermometer and cook until it reaches 160°F.
  10. Let the burgers rest for 2–3 minutes before serving.
