How to Cook Moist Pork Chops

Ingredients
  

  • Pork chops about 1 inch thick
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Paprika
  • Olive oil

Equipment

  • Heavy cast-iron skillet
  • Instant-read thermometer
  • Small bowl

Method
 

  1. Take the pork chops out of the refrigerator and let them sit at room temperature for about 20–30 minutes.
  2. Pat the pork chops dry.
  3. Season both sides with kosher salt, black pepper, garlic powder, and paprika.
  4. Heat olive oil in a heavy cast-iron skillet over medium-high heat.
  5. Sear the pork chops for about 3–4 minutes per side.
  6. Lower the heat and continue cooking until the thickest part reaches an internal temperature of 145°F.
  7. Remove the pork chops from the skillet.
  8. Let the pork chops rest for 5 minutes before serving.

Cook Time: about 3–4 minutes per side for 1-inch pork chops, then finish gently until the internal temperature reaches 145°F.
Resting Time: 5 minutes.
Thicker or thinner pork chops may require adjusted cooking time.
The method can be used with boneless or bone-in pork chops.
