Pork Egg Roll in a Bowl

A quick one-pan pork egg roll in a bowl made with ground pork, cabbage, carrots, garlic, ginger, soy sauce, and sesame oil. A savory low-carb dinner with classic egg roll flavors without the wrapper.

Ingredients
  

  • 1 tbsp vegetable or avocado oil
  • 3-4 cloves garlic minced
  • 1-2 tbsp Fresh ginger grated
  • 1 lb ground pork
  • 1 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 yellow onion thinly sliced
  • 4-6 cups Green cabbage shredded
  • 1 cup carrot shredded
  • 1 tbsp toasted sesame oil for cooking the vegetables
  • 1/4 cup reduced-sodium soy sauce
  • 1 tbsp sriracha or sweet chili sauce
  • 1-2 tsp toasted sesame oil for finishing
  • Sliced scallions
  • Toasted sesame seeds

Equipment

  • Large skillet or wok
  • Wooden spoon or spatula

Method
 

  1. Heat the vegetable or avocado oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and grated ginger and cook for 30–60 seconds until fragrant.
  3. Add the ground pork, sea salt, and black pepper. Break the pork apart with a wooden spoon or spatula.
  4. Brown the pork for 7–10 minutes until no pink remains and the internal temperature reaches 160°F.
  5. Push the browned pork to one side of the pan.
  6. Add 1 tablespoon toasted sesame oil to the open side of the pan, then add the sliced onion, shredded cabbage, and shredded carrot.
  7. Pour in the soy sauce and sriracha or sweet chili sauce.
  8. Cook, stirring often, for 5–8 minutes until the vegetables are tender-crisp.
  9. Mix the vegetables with the browned pork.
  10. Remove the pan from the heat and stir in 1–2 teaspoons toasted sesame oil and sliced scallions.
  11. Divide among bowls and garnish with toasted sesame seeds and extra scallions.

Ground pork should reach an internal temperature of 160°F.
