Korean Beef Rice Bowl

A quick Korean-inspired ground beef rice bowl with savory-sweet bulgogi-style flavors, rice, fresh vegetables, and sesame. Perfect for an easy weeknight dinner or meal prep.

Ingredients
  

  • 1 lb ground beef
  • 1 onion grated
  • 1 apple grated
  • 2 cloves garlic minced
  • 1 thumb-size piece fresh ginger minced or grated
  • 2-3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp neutral oil
  • Cooked rice about 1 cup per serving
  • Sliced scallions
  • Sesame seeds
  • Carrot julienned, optional
  • Cucumber thinly sliced, optional
  • Kimchi optional
  • Gochujang optional

Method
 

  1. Grate the onion and apple, then mince the garlic and ginger.
  2. Cook the rice according to package directions.
  3. Prepare any vegetables and garnishes you want to serve with the bowls.
  4. Mix the grated onion, apple, garlic, ginger, soy sauce, brown sugar, and sesame oil to make the sauce.
  5. Heat the neutral oil in a large skillet over medium-high heat.
  6. Add the ground beef and break it apart with a spatula.
  7. Cook the beef for 5–7 minutes until no longer pink and beginning to brown, then confirm it has reached 160°F (71°C) with an instant-read thermometer.
  8. Drain excess grease if needed.
  9. Pour the prepared sauce over the beef and reduce the heat to medium-low.
  10. Simmer for 3–6 minutes until the sauce thickens and coats the beef.
  11. Remove from the heat and finish with a little sesame oil and sesame seeds.
  12. Divide the cooked rice among bowls.
  13. Spoon the Korean-style ground beef over the rice.
  14. Add vegetables, scallions, sesame seeds, kimchi, or gochujang as desired and serve.
